Maybe some tunes, too…because chopping and cooking is more fun with music (side note: current favorite station on Pandora is Trampled By Turtles Radio). The best part of one-pan recipes is that it results in a quick kitchen clean up. The fewer the dishes the better and the more time you’ll have to spend doing the things you love like going for a walk, reading a book or taking a bath (or doing the things that must get done…clean, help kids with homework, make lunches for the next day….). However you spend that extra time, know that it won’t be spent doing dishes! #winning

One-Pan Kielbasa Veggie Bake is full of flavor and makes for great next day leftovers or scrambled egg additions.
So much flavor in this dish thanks to the Kielbasa, a polish sausage that’s seasoned with garlic and other spices. My hubby doesn’t typically go for all the veggies but if it includes sausage (or bacon) there’s a good chance he’ll eat it and enjoy it. This recipe is a winner and one he even requests from time to time. Let me repeat that, this recipe is a winner and one he (who is quite picky) requests from time to time! Now if you aren’t able to get your hands on some Kielbasa, feel free to use any sausage of your choice. I just recommend one that’s made with quality and real food ingredients (suggested brands – Applegate, Aidells, Pedersons, Garrett Valley).
If you have leftovers, I recommend you add them to an egg scramble or an omelet. So good!
Prefer a lower carb version? No problem!

- 12 oz. green beans, trimmed and rinsed
- 5 medium red potatoes, washed and cubed
- 2 cups bell peppers, sliced (mini bell peppers work great)
- 1 small red onion, sliced
- 2 tsp. fresh thyme leaves (or 1 tsp. dried)
- 3 garlic cloves, minced
- 12–14 oz. kielbasa or sausage of choice, sliced (Whole30 compliant – Applegate sausage, Garrett Valley or Pedersons)
- 2 Tbsp. avocado oil or olive oil
- Sea salt and pepper
- Preheat oven to 375 degrees F.
- Combine all of the ingredients on a sheet pan lined with parchment. Toss with oil, season with salt and pepper.
- Bake for 25 minutes or until veggies are tender, tossing once or twice during the baking process.
Tip: If using turkey Kielbasa, you may want to wait 10 minutes into the baking time before adding to prevent it from drying out.
