Dark Chocolate + Trail Mix = Yeah, baby!

We all love a handful of sweet and salty trail mix (some of us more than others, admittedly). And I think we can all agree that trail mix with dark chocolate is the BEST. We totally won’t judge if you’re the kind who picks out the chocolate bits because we’ve been known to do it too. That’s why we needed to up our game and make a trail mix with the proper ratio of dark chocolate to trail mix for those times when there just aren’t enough chocolaty bits to go around.

Keepin’ it Clean with Grain-free, Gluten-free and Vegan Ingredients

We used our favorite brand of allergy-friendly chocolate morsels in this recipe to keep them clean free of the top allergens: wheat, corn, soy, dairy and egg. You can substitute sunflower seeds or hemp hearts for the almonds to make them nut-free so you can have something that’s safe for just about anyone to enjoy.

How to Make Your Own Dark Chocolate Trail Mix Bites

Using a spoon, drizzle the melted chocolate (about a teaspoon) onto the mat and then use the spoon to swirl it around to form a delicious dark chocolate disk. We kept them pretty small and “two bite-sized” to keep portion size in check (and so you have plenty to share!)

We used a silicone baking mat, or “silpat”, for easy removal and clean up but you can use parchment paper too. We love that the mats are reusable, non-stick and oven-safe up to 480°F and can be used for cookies, roasting vegetables and making these delicious little bites of chocolaty heaven. And they’re super affordable compared to all of that parchment paper.

Once you’ve got your chocolate disks formed, start studding them with your trail mix bits. We used dried cranberries, sprouted pumpkin seeds, candied ginger and chopped almonds but the possibilities are endless. We love the bite from the ginger and they way it compliments the dark chocolate and tart cranberries.

Then sprinkle those babies with sea salt! We used Real Salt for it’s purity and higher trace mineral content. Either coarse or fine salt will work, it’s your call.

Ingredients

  • 1 bag (10 oz.) chocolate chips or chunks (we used Enjoy Life! Mega Chunks)
  • ¼ tsp. coconut oil
  • 1 cup trail mix of choice (we used raw pumpkin seeds, dried cranberries, candied ginger and chopped almonds)
  • sea salt (we used Real Salt)

Instructions

  1. Melt the chocolate and coconut oil in a double boiler over medium-low heat or place a glass bowl on top saucepan of simmering water. Microwaving is also an option. Stir in coconut oil.
  2. Once melted, spoon chocolate onto parchment paper or silicone baking mat.
  3. Use a circling motion when spooning chocolate onto parchment paper or silicone baking sheet to form round bites.
  4. Sprinkle with trail mix and a tiny dash of sea salt.
  5. Let set until hardened. Remove from parchment and store in an airtight container in the fridge for up to 1 week.
