Wild Rice Spinach Salad with Cherry Vinaigrette

  • 1 cup water
  • 1/4 cup wild rice blend
  • 56 cups baby spinach or greens of choice
  • 2 celery stalks, chopped
  • 34 green onions, chopped
  • 1/2 cup red onion, chopped
  • 1/2 cup dried cherries
  • 1/4 cup toasted walnut halves {or chopped nuts of choice}


  • 2 Tbsp. raw apple cider vinegar (such as Eden Organic)
  • 2 Tbsp. extra virgin olive oil
  • 1 clove garlic, chopped
  • 1/8 tsp. ground black pepper
  • 1/8 tsp. sea salt
  • 1/2 cup fresh/frozen {thawed} cherries
  • 1/2 tsp. dry mustard or 1 tsp. dijon mustard


  1. In a medium saucepan, bring water to a boil and stir in wild rice. Lower the heat; cover and cook the rice until grains are tender {approx. 40 min}.
  2. While the rice cooks, blend apple cider vinegar, olive oil, garlic, salt, pepper, cherries and mustard in a blender for the dressing. Set aside.
  3. In a large bowl, combine spinach, celery, green onions, red onion, dried cherries and nuts.
  4. Toss with ½ of the cherry vinaigrette.
  5. When the rice is finished, drain any excess liquid and let cool.
  6. Add the rice to the salad; toss again with the remainder of the cherry vinaigrette and serve.


To make this a well-balanced meal, feel free to add grilled chicken or turkey for protein.
