–Bones from (1) 3-4lb. chicken –1 Tbsp. apple cider vinegar –Water –Salt to taste OPTIONAL FOR FLAVOR: – 2 medium carrots, cut in half – 1 medium parsnip, cut into large chunks  – 3 celery ribs  – 1 large yellow onion, quartered  – 6 garlic cloves, lightly smashed – 1 bay leaf – 8–10 peppercorns – A handful of fresh herbs (sage, rosemary, thyme, and/or parsley)

In the Instant Pot, combine the  bones, apple cider vinegar and enough water to cover everything.

Cook on high-Pressure setting and adjust the cooking time to 120 minutes. Run the cycle twice for gelatinous broth.

Allow pressure to release naturally (10-20 minutes). Strain the broth through a mesh lined strainer.

Transfer broth to glass jars with lids – leaving the lids off until the broth has cooled enough to be refrigerated.
