Brussels, bacon, feta…oh my!

There is a high probability that this scrumptious side-dish will result in multiple recipe requests from those around the table. I wouldn’t be sharing this recipe with you if it weren’t for my mother-in-law who just so happened to ‘try something new’ for our Thanksgiving meal this year. She had never even made Brussels sprouts before but I’d have to say, and you’ll find out soon once you make this recipe, that she nailed it on the first try! Which really doesn’t surprise me beings I’ve never tried anything of hers that I didn’t like and I’m not just saying that for brownie points!
Moral of the story, these Roasted Brussels with Bacon & Feta might just be my new favorite side-dish recipe! I was one of those people requesting the recipe thinking she’d pull out her trusty Taste of Home cookbook (which I also own and it’s still one of my faves to this day) or send me on over to yummly. Instead, she gave me a handwritten recipe card and told me that she just took bits and pieces of what she liked from different recipes on the internet and made up her own. At that moment, I knew this recipe needed to be shared on the blog! With her approval, of course! 🙂

The combination of perfectly roasted garlicky brussels sprouts, crisp bacon, tart cranberries, crunchy pecans and melty feta cheese is heavenly!

Prep ahead tips!
Another awesome perk of Roasted Brussels with Bacon & Feta is that there are several steps you can do to prepare the dish the day before it’s on the menu. Doing this will allow you to have more time to be merry and mingle. The steps are as follows:
- Wash, trim and halve the Brussels sprouts, toss them with the oil and garlic, place in a container or large zip top bag
- Cook the bacon and chop it
- Toast the pecans

Roasted Brussels sprouts tossed with bacon, cranberries and toasted pecans and topped with melty feta cheese are surely to be a crowd-pleasing side-dish and a recipe you’ll make again and again!
It’s time to give these scrumptious brussels a try! I know I’ll be making them for one of my five Holiday gatherings this year!
- Preheat oven to 400 degrees.
- Wash and trim brussels sprouts, slice in from half from top to bottom.
- Mix together olive oil, balsamic vinegar, garlic, salt and pepper. Toss with Brussels sprouts.
- Arrange on a baking sheet and roast for 20-25 minutes or until tender and golden brown.
- Toss with pecans, bacon and cranberries. Top with feta.
- Serve warm.
- *Toast the pecans in a small skillet over medium low heat tossing occasionally. This will only take about 4-5 minutes. Watch closely as they can burn easily.
