Sweet potatoes and bacon, yes please!
Sweet potatoes are quite possibly one of my most favorite foods. I love the versatility of them and how they can be made sweet or savory (I prefer savory), as well as the nutritious benefits they provide. AND I can’t forget to mention how darn delicious they are! It’s hard to believe that there was once a time when I wouldn’t even go near them.
That was in my younger years. My picky eating days before I knew that the sweet potato was more than just a canned product served on the Thanksgiving table and usually topped with marshmallows and overly sweetened with brown sugar. While I know some people are a big fan of that dish, like my father, I’m just not one of those people.
Thankfully, those days are in the past and I have since discovered the glorious sweet potato in its most natural form as well as all of the possibilities that come with this delicious, starchy, oh-so-perfect vegetable. They are truly one of my favorite foods. So with that said, these Maple-Bacon Roasted Sweet Potatoes are a must try. For real, you gotta try them! The combination of sweet potatoes with bacon is just plain hard to beat and the addition of a little maple syrup adds the perfect amount of sweetness. Sweet, salty and comforting…can you ask for anything more?

It’s time to gather the five ingredients for this recipe (heck, you may even have everything you need on hand) and give these Maple-Bacon Roasted Sweet Potatoes a try! I promise, they won’t disappoint.
- 4 cups peeled sweet potatoes (about 3–4 medium), cut into 1/2 -inch cubes
- ½ cup thinly sliced red onion (about ½ medium)
- 1 tsp. coconut, avocado or olive oil
- 2 tsp. maple syrup
- 2 slices thick-cut bacon, uncooked, sliced or chopped
- Sea salt and black pepper to taste
- Preheat oven to 425ºF.
- Place sweet potatoes and onion in a 9×13-inch baking dish.
- Toss with oil and maple syrup.
- Sprinkle uncooked bacon over the potatoes.
- Bake for 20 minutes, stir, and bake an additional 10 minutes or until potatoes are tender and slightly caramelized.
- Season with salt and pepper to taste before serving.
- Serving Size: 1/4 recipe, about 3/4 cup
