There’s just something so tasty about the combination of bacon, lettuce and tomato. Add to that tender chicken chunks, creamy avocado oil mayo, red onion, fresh chives and avocado and serve it up however you please for a scrumptious summertime lunch.

Ingredients

  • 3 cups cubed cooked chicken 
  • 4 strips no sugar bacon, cooked to crisp & chopped 
  • ⅓ cup diced red onion
  • ½ cup sliced grape tomatoes
  • 3 Tbsp. chives, chopped
  • ½ cup mayonnaise 
  • Salt and pepper to taste

For serving:

  • 810 lettuce leaves (butter or leaf lettuce)
  • Sliced avocado 

Instructions

  1. Combine chicken and remaining ingredients in a bowl. Add mayo and gently stir to combine. 
  2. Serve chicken salad and avocado slice in a lettuce leaf, over a bed of mixed greens, on top of cucumber slices or your favorite crackers or toasted bread (not Whole30). Top with chives and crumbled bacon if you wish.
