If you have been a reader of our blog for awhile now you most likely are aware that we love a good weekend meal prep. While it doesn’t happen every weekend, we both do our best to make it a priority. Because meal prepping is a big part of what we share on this blog, we create recipes with that in mind. Recipes that are made with few ingredients, are simple, approachable and of course, delicious.
These 3-ingredient Peanut Butter Energy Bites take just 10 minutes of your time to make, are tasty and perfect for meal prepping.
Give ’em a boost of protein if you wish
For a boost of protein, you can replace 1/4 cup of the oats for 1/4 cup of protein powder. I like to use Primal Kitchen Unflavored Collagen Peptides. This protein powder won’t change the flavor of the 3-Ingredient Peanut Butter Bites and it’s a great way to sneak in a boost of protein.
Double the batch because these bites are freezer-friendly!
Thus recipes is simple to make, made with less than 10 real food ingredients, is meal ‘prep-able’, freezer-friendly and takes just a few minutes of your time. Awesome, right?! These are my favorite kind of recipes because they allow you to eat healthy, nourishing foods while spending less time in the kitchen so you’re left with more time to do the things you love.
Make them nut-free with one simple substitution.
We do our best to create recipes for ALL to enjoy! So if you have a nut-allergy, whether it be peanuts or tree nuts, you can simply substitute sunflower seed butter for the peanut butter in this recipe. It will give the bites a little bit different of a taste, but they’ll still be delicious nonetheless.

No-Bake 3-Ingredient Peanut Butter Bites
Made in less than 15 minutes, these gluten-free No Bake 3-Ingredient Peanut Butter Bites are a wholesome, make-ahead snack option or tasty lunchbox addition.

- Total Time: 15 min
- Yield: 20-24 bites 1x

Ingredients
- 1 1/2 cups rolled oats or quick oats
- 2/3 cup natural peanut butter (may sub any nut or seed butter of choice)
- 3 Tbsp. honey or maple syrup
Instructions
- Add the oats to a food processor or blender. Process or blend until oats reach a flour consistency.
- Next add the peanut butter and honey or maple syrup. Process or blend until ingredients are well combined and come together to form a dough ball. May need to scrape sides once or twice.
- Roll into round bites – about a scant tablespoon per bite. If dough isn’t holding together, add 1-2 Tbsp. more of peanut butter.
- If dough starts to stick to hands, oil them with coconut oil or cooking spray.
Notes
Store Peanut Butter Bites in an airtight container, in the fridge, for up to 2 weeks.

Hi Jan, this recipe has not been tested with anything other than oat flour. You could try almond flour if you’d like. We don’t have a recipe for pumpkin shaped cookie but we do have one for Soft Pumpkin Cookies with Cream Cheese Frosting , perhaps that’s the one you had in mind?
Otherwise, I use this recipe from Paleo Running Mama for grain-free cut out cookies.

They could stay at room temperature for awhile (maybe a week). I just prefer to keep them in the fridge as they hold together a little better.

Yes, you can. We suggest adding 1/2 cup collagen – you may need to add a little water to get them to stick together after you’ve stirred in the collagen.

Always looking for diabetic-friendly recipes. I saw a version of this recipe that leaves the rolled oats much more flaky and less in a powder. My plan is to use the rolled oats as they are, without processing them into powder.
From everything I’ve read, the less processed foods are more diabetic friendly, and rolled oats are plenty small enough to work in this recipe without making them into a powder more flour. 🙂
