Everyone loves tacos – and you’re gonna love how tasty and easy these are!
Tacos are pretty much on everyone’s list of comfort foods – whether they’re plain-jane with just ground beef and a few fixin’s, made with fish or roasted vegetables or tender shredded chicken and lots of cool, creamy avocado. We all love a good taco for it’s flavor and flexibility.
We love these easy Slow Cooker Chicken Tacos because they’re budget-friendly, freezer-friendly (hint: double the recipe for a future meal), made with only 8 ingredients (even fewer if you substitute a premade taco seasoning mix for the added spices) and it’s takes just 5 minutes of prep time. Seriously, what could be easier?!

Jessica’s Notes on the InstantPot: The InstantPot is nifty little machine that does the work of 7 gadgets. I was initially drawn to it for it’s electric pressure cooker feature but have now started to branch out and start exploring some of the other features (slow cooker, rice cooker, warmer, steamer, yogurt maker and saute pan.) This was my first time using the slow cooker feature so I wasn’t sure how it was going to do compared to my nearly 20 year old 6-quart slow cooker.
I didn’t brown the chicken before adding the salsa and spices, however, the saute feature is great for this. I use that feature a lot when pressure cooking soups or stews to brown the meat or soften the onions and garlic (both of which add a certain depth of flavor).
So how did it do? I worked great though it seemed to run much hotter than my regular slow cooker does. I set the InstantPot to “Less” which, according to the manual is supposed to correspond to “Keep Warm” on a conventional slow cooker. At around 2 hours into the cooking time I noticed the sauce was vigorously simmering and at just over 3 hours the meat was perfectly cooked. If I’d have cooked it longer it likely would have been gritty (like overcooked chicken tends to be).

Here are a few of our favorites: Diced avocado, homemade guacamole (yum!), fresh cilantro, diced tomato, olives, lime wedges, diced jicama, diced onions or peppers, shredded carrots, cabbage, broccoli slaw, pica de gallo, hot sauce, black beans, crushed blue corn chips, sour cream or your favorite cheese. Wrap it in a lettuce wrap (butter lettuce or leaf lettuce works great), corn tortilla, or make an enormous veggie-filled taco salad!

- 1-1¼ lb. chicken breast or thighs
- ½ cup organic or homemade salsa
- ¼ cup water
- 1 tsp. ground cumin
- 1 tsp. chili powder
- ½ tsp. garlic powder
- ½ tsp. ground coriander (optional)
- ⅛ tsp. cayenne pepper (more for more heat)
- ¼ tsp. sea salt
- ¼ tsp. black pepper
- Salad greens or bibb lettuce
- Fresh cilantro
- Toppings: Fresh chopped veggies of choice, olives, avocado, fresh salsa, lime wedge etc.
- Place all ingredients except salad greens/lettuce and toppings in a slow cooker and cook on high for 3-4 hours.
- Remove chicken and shred with 2 forks. Return to slow cooker and cook on low for an additional 30 minutes.
- Serve chicken taco meat in a lettuce wrap or on a bed of greens, top with cilantro and add desired toppings.
