This recipe is gluten-free, dairy-free and vegan-friendly.
What’s with the Brûlée?
To make this bowl of oatmeal even more out-of-this-world, we sprinkled it with a little coconut sugar and set it under the broiler for just a minute to create a caramelized, crispy topping. Hence, the Brûlée. Don’t skip this step, it’s totally worth it! And if you’re feeling extra adventurous, we suggest you try this step with Maple Sugar.
Make Pumpkin Pie Oatmeal Brûlée with regular oats, steel-cut oats, or pre-cooked Pacific Organic Steel-Cut Oatmeal.

We chose to use the unsweetened flavor in this recipe to help keep the amount of added-sugar as low as possible and to allow the flavors of pumpkin, maple, and vanilla shine through! So good.
Optional: add more protein.
For a little boost of quality protein, we like to add a scoop of Vital Proteins Collagen Peptides. This will add an additional 9 grams of protein to your bowl of oatmeal without changing the flavor. So with 9 additional grams of protein and 6 grams of fiber from the oats, this bowl of Pumpkin Pie Oatmeal Brûlée ought to keep you feeling satisfied for hours to come.

- 1 cup cooked steel cutor regular oatmeal (may use pre-cooked Pacific Organic Steel Cut Oatmeal)
- 2 Tbsp.pumpkin puree
- 1 tsp. Grade B Maple syrup
- ¼ tsp. vanilla extract
- ¼ tsp. pumpkin pie spice
- Pinch of sea salt
- 1 Tbsp.pecans, chopped
- ½ tsp. coconut sugar
- Coconut milk or almond milk, optional
- 1 scoop collagen peptides, optional (adds 9 grams of protein)
- Place a small saucepan on medium heat. Combine cooked oatmeal, pumpkin puree, maple syrup, vanilla, pumpkin spice and sea salt. Mix together and heat thoroughly for 3-4 minutes and then stir in pecans. Remove from heat.
- Set oven to broil.
- Transfer oatmeal to an oven-safe bowl or ramekin. Sprinkle with coconut sugar.
- Broil for 1 minute or until brown on top.
- Top with additional pecans and milk if desire.
